I find that often the more simple the recipe is, the more delicious the meal will turn out to be. I'm not exactly sure why, but I do believe its partially due to the fact that you give the ingredients their share of time and importance in the final product, which brings out a hidden level of flavors from each and every ingredient, that later fuse with each other to create something.. delicious,
the recipe took me no time to prepare, though, i takes around an hour in the oven (where you practically don't need to worry about it)
- 1 Large Bone-in chicken breast (~1kg)
- Broccoli
- Onions
- Carrots
- Potatoes
- Salt, Pepper
- Herbs of your choice (rosemary)
- Mustard
- Tomato paste
Step 1:
start with washing the vegetables, cutting them into large pieces (I cut the onions in half, and kept the carrots whole!)
lay everything at the bottom of the pan with 1tsp of vegetable oil (minimal amount), and mix with the vegetables
Step 2:
Lay the chicken breast, as is, skin-side up over the vegetables, sprinkle the whole pan salt (yes, only on top of the breast, since the bottom is mainly bone, I find it wont make a big difference)
add the pepper, and rosemary on top (or other herbs)
Step 3:
add around 1 big spoon (1Tbsp) of mustard and 1 tea spoon (1 tsp) of tomato paste over the breast. mix them well, and spread over the upper surface and sides of the breast
Step 4:
cover with foil
Bake at 220 C for 50 mins (depending on the size of your chicken breast)
uncover for 10 minutes
to check for doneness insert a fork/knife at the thickest location all the way to the bone, and a clear fluid will come out (if bloody or unclear/foggy, its not done yet)
Step 5: extra
I boiled small potatoes with their skin, in salted water, and added it next to the dish.
Step 6: Serve
